A good electric pressure cooker generally has five elements:
Uniform heating means that the food is evenly heated (that is, the inner tank is evenly heated). At present, IH heating products have the best heating uniformity among the mainstream products on the market, followed by arc heating plate products, while the traditional flat heating plate products have the worst heating uniformity;
The advantages and disadvantages of a good liner mainly depend on the thickness and coating. Generally speaking, the thicker the liner, the better its heating uniformity and heat storage. The quality of the liner coating (especially the inner surface) mainly depends on the adhesion index. A good liner coating will not fall off even if it is scrubbed with steel wire (such as ceramic coating);
Adjustable pressure means that the pressure can be adjusted within a certain range (the theoretical adjustment range is 0~100Kpa), and the pressure required by different ingredients is different (for example, stewed pork hoof needs high pressure, while stewed pork ribs need medium pressure);
Accurate temperature measurement means that the temperature in the pot is sensed at all times to achieve pressure regulation and control. Temperature measurement is the basis of pressure regulation and control. Only products with accurate temperature measurement can achieve accurate pressure regulation;
Curve optimization refers to the electric control curve (combination of pressure and time) set for different dishes. In the whole cooking process, the scientific change of pressure and time combination is the key to determine the nutrition and taste of each dish.
In addition, because the traditional electric pressure cooker is used to stew the food in the cooking process, and the ingredients are not boiled, it is not easy to stimulate the taste of the ingredients, so whether the whole cooking process is "exhaust boiling" is also one of the important characteristics of the high-quality electric pressure cooker.
